Teachers!

Next week is teacher appreciation week!  Last year at my school we had a theme for teacher appreciation week and we all dressed up like super heroes.   This year we get to be rockstars.....this should be interesting.  But I will get to my point....if you know a teacher make sure you let them know that they are appreciated next week :)

Happy Easter

Happy Easter from The Wojciechowski Family!

Dinosaur Eggs

So each year we dye Easter eggs.  We used to do it with Bryan's parents and his sister Aimee the night before Easter.  But, the last two years we did it at our house (last year was our first Easter in our house).  I let Bryan pick out the Easter egg kit this year and he found the perfect one, the dinosaur Easter egg kit!  We invited Emily and Kyle to join in the fun.  Here are some pictures!

Banana Breeze

Banana Breeze is one of my favorite desserts and it was given to me by my good friend Barbara!  I'm making it for Easter at my in laws!

Banana Breeze

Crust
  • 2 1/2 cups frosted flakes (crushed)
  • 1/2 Cup butter (melted)
  • 3 teaspoons sugar
  • 1 teaspoon cinnamon
      1.  Mix all together, lay at bottom of pie plate

Filling
  • 1 can sweet condensed milk
  • 1 teaspoon vanilla
  • 2 bars of cream cheese
  •  1-2 Bananas
       1.  Mix in bowl with mixer until creamy than lay over crust.
       2.  Cut bananas up and lay on top of pie.  (I like to make a layer of bananas in the filling, put a little bit of
            the filling over the crust, make a layer of bananas and then cover the rest of the pie with the filling.)
       3.  Refrigerate over night.

Barbara used to make this for us when we were at Western Michigan University.  We would pig out on it for days.  Good memories :)

Sugar Cut Out Cookies

I decided to make Easter cut out cookies.  This is the cut out recipe my mom has used for years, which she got from her mom (Grandma Cookie).  I guess we called her Grandma Cookie because she always had awesome cookies....so you should probably make these cookies to see why she got such a sweet nickname.  Hope you enjoy!

Sugar Cut Out Cookies
  • 1 cup butter
  • 2/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1 cup quaker quick oats
  1. Cream the butter and sugar together in a large bowl.
  2. Add in egg, vanilla, and flour into the large bowl and mix (by hand)  with the butter/sugar mixture.
  3. Once everything is well mixed add in the quaker quick oats and mix (by hand) again until well blended.
  4. Chill the dough in the fridge for about 20 - 30 minutes.  
  5. Roll out on floured board 1/2 inch thick
  6. Choose your cookie cutters and get busy!
  7. Cook at 350 degrees for 8-10 minutes.
Butter Cream Frosting (Recipe from Domino Sugar)
  • 1 - (1 lb.) pkg. Domino® Confectioners Sugar (approx. 3 3/4 cups)
  • 1/2 cup - butter or margarine, softened
  • 3 to 4 tablespoons - milk
  • 1 teaspoon - vanilla
  1. Combine in large bowl, with mixer at low speed, confectioners' sugar, butter, milk and vanilla. 
  2. Beat at medium speed 1-2 minutes until creamy. If desired, add more milk until frosting is spreading consistency.

Macaroni and Cheese (Crockpot)

I decided to test out a new recipe from my Slow Cooker Recipes cook book.  I did change the recipe up a bit with different types of cheese and it turned out pretty tasty.  Bryan gave it two thumbs up and Luke wouldn't leave the kitchen when I was making it.

Macaroni and Cheese
  • 6 cups cooked macaroni
  • 2 tablespoons butter, melted
  • 4 cups evaporated milk
  • 3 cups Cheddar cheese, shredded
  • 3 cups Pepper Jack cheese, shredded
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • Chili powder (to taste)
  1. In a large mixing bowl, toss macaroni with butter.  Stir evaporated milk, cheese, salt, pepper, and chili powder; place in crock-pot slow cooker.  Cover; cook on high 2 to 3 hours.

Luke Joseph

 Yes, our dogs have middle names.  Luke Joseph goes by a few names (Luke or Lukie Joe), he will be one on May 22, 2011!

Luke is a pain in the butt.  He has already had surgery to remove rope toy strings and a rock from his stomach (right after Christmas...what a great gift).  He is lucky that he is cute and that we have big hearts or he would have been out of this family a long time ago!





Lacey Lynn

As most of you know Bryan and I do not have kids yet.  But we have two Brittany Spaniels that we treat like our children.  Lacey Lynn is three years old and is very lazy these days.

Lacey has crazy curly thick hair and my mom thinks she is part llama.  But, we love her no matter what. 






Welcome to my blog

I decided to start a blog.  Who knows if I will keep up with it or not.  I'm going to use this to keep family members up to date with what is going on in our exciting life as a newly married couple.  I'm also getting into baking/cooking so I will post some awesome recipes that I tryout and like.  I'm not the best writer...so don't judge me.  If you want to follow my blog then go for it, if not then keep on moving.
